Bitter Greens and Anchovy SauceMozzarella, Basil, and Cherry Tomato Skewers

This is the perfect summer appetizer, refreshing,colorful, and so easy! Have the kids help assemble the skewers, but just watch out that they don't eat all of the profits!

6 oz. bite-size mozzarella balls, drained well
1 pint cherry tomatoes (yellow and red)
6 leaves basil, julienned
Extra-virgin olive oil
Salt and pepper to taste
16 wooden skewers

Thread the mozzarella balls onto the skewer, alternating with the cherry tomatoes. Place on a platter, drizzle with olive oil, season with salt and pepper, and garnish with the basil sprinkled on top.

Serves 8
